By combining tender riced cauliflower with a savory blend of sharp cheddar, tangy sour cream, and aromatic garlic, this golden-baked dish offers a crispy surface and a creamy, satisfying interior that makes eating vegetables feel like a true indulgence.
Ingredients
24 oz. frozen cauliflower rice, thawed and squeezed dry
3/4 cup sour cream
1/4 cup mayonnaise
2 cups sharp cheddar cheese, shredded
2 cloves garlic, minced
1 teaspoon kosher salt
1/2 teaspoon black pepper
Instructions
Preheat your oven to 375 degrees Fahrenheit.
Combine thawed cauliflower rice, sour cream, mayonnaise, minced garlic, salt, pepper, and one cup of shredded cheddar in a large bowl.
Stir thoroughly until ingredients are evenly combined.
Transfer the mixture to a lightly greased 8×8 inch baking dish.
Spread the mixture evenly and top with the remaining cup of shredded cheddar cheese.
Bake for 25 minutes until the cheese is melted and bubbling.
Notes
Ensure you squeeze the moisture out of the cauliflower rice thoroughly to prevent a watery result. You can substitute Greek yogurt for the sour cream if you prefer higher protein content.
