Ingredients
2 cups shredded mozzarella (low-moisture preferred)
2 oz cream cheese, room temperature
1½ cups blanched almond flour
4 oz ground beef (85% lean)
¼ cup chopped bell pepper (red or yellow)
1 egg
1 tsp baking powder
½ tsp baking soda
½ tsp xanthan gum
1 tsp salt
2 tbsp butter, melted (for basting)
½ cup chopped onion
1 tsp non-alcoholic Worcestershire sauce
Instructions
Preheat oven to 375°F (190°C) and grease a muffin tin with olive oil.
In a bowl, mix almond flour, baking powder, baking soda, xanthan gum, and salt.
Beat room-temperature cream cheese and egg until smooth, then combine with dry ingredients for 30 seconds.
In a separate pan, sauté ground beef, onion, and bell pepper until browned. Add Worcestershire sauce and season.
Portion dough into 8 equal balls, make a 1-inch indentation in each with a spoon, and fill with beef mixture.
Top each with 1 tbsp mozzarella, then bake 20 minutes. Brush melted butter over buns during last 5 minutes of baking.
Notes
Chill dough balls 10-15 minutes for cleaner shapes. If using tight muffin tins, line with parchment paper. Mozzarella can be swapped with cheddar for sharper flavor. Non-alcoholic Worcestershire is crucial for keto compliance.
