Description
A protein-packed, low-carb casserole using lean ground beef, bell peppers, and mozzarella cheese in a single-skillet method for quick, keto-friendly family dinners. Fire-roasted tomatoes, caramelized veggies, and precooked rice add briny, smoky, and chewy textures without the meaty omissions.
Ingredients
Extra-virgin olive oil 2 tablespoons
90%-lean ground beef 1 pound
Red onion 1 large
Multicolored bell peppers 3 medium
Garlic 6 cloves
Smoked paprika 2 teaspoons
Dried oregano 2 teaspoons
Fire-roasted tomatoes 1 can (15 ounces)
Shredded mozzarella cheese 8 ounces
Precooked brown rice or cauliflower rice 3 cups
Instructions
Heat olive oil in a large skillet over medium; sauté onion, bell peppers, and chopped garlic until tender and slightly caramelized (8-10 minutes).
Add ground beef, breaking it up with a spoon; cook until browned. Remove and drain excess fat, if desired.
Return beef to skillet, stir in smoked paprika, oregano, and fire-roasted tomatoes. Simmer gently for 5-7 minutes until sauce thickens slightly.
Fold in precooked rice. Transfer mixture to a 9×13-inch oven-safe skillet or dish.
Sprinkle shredded mozzarella evenly over the top. Broil at 400°F (202°C) for 2-4 minutes until cheese is melted and golden brown.
Notes
Ground turkey or lamb are excellent halal substitutes for beef.
Classic mozzarella can be swapped with low-fat cheddar or gouda.
Freeze fully cooked portions in containers for 1-2 months.
Refry any bell peppers first to deepen their flavor if time allows.
Use cauliflower rice for lowest carb content; 1 cup cauliflower rice = ~2g carbs.
