Description

A decadent one-pot meal combining shredded chicken, zesty ranch seasoning, and a rich cream cheese sauce with sharp cheddar for a velvety, low-carb comfort food dinner.

Ingredients

2 cups shredded chicken
1 ounce dry ranch seasoning
8 ounces penne noodles
3 ½ cups chicken broth
4 ounces cream cheese, room temperature
4 slices cooked and crumbled beef or turkey bacon
2 cups shredded cheddar cheese

Instructions

Heat chicken broth in a large pot over medium-high heat.
Add dry noodles and cook until al dente, about 4-6 minutes, stirring occasionally.
Stir in 2 ½ cups broth to keep noodles moist until softened.
Add cream cheese and 1 ½ cups cheddar, stirring until melted into a smooth sauce.
Fold in shredded chicken, beef/turkey bacon, and ranch seasoning, mixing well.
Cook for 2-3 minutes until heated through.
Finish with remaining cheddar and season to taste.

Notes

Use low sodium broth to balance flavors.
Substitute penne with rotini or bow ties.
For a smokier flavor, use crumbled cooked turkey bacon.
Store leftovers in an airtight container for up to 3 days.
