Description

A creamy Tex-Mex appetizer blending sweet corn, smoky halal bacon, and three cheeses. This hearty dip balances tangy brightness with rich texture, perfect for game days or outdoor gatherings.


Ingredients

2 cans (15.25 oz each) whole kernel corn, drained
1 can (15 oz) black beans, rinsed and drained
½ cup mayonnaise (full fat)
4 oz cream cheese, softened
1 cup mild cheddar cheese, shredded
1 cup mozzarella cheese, shredded
½ cup parmesan cheese, grated
1 large jalapeño, seeded and diced
8 slices halal beef bacon, cooked and crumbled
1 medium red onion, finely diced
½ tsp kosher salt (adjust to taste)


Instructions

Cook halal bacon in a skillet until crispy, crumble into small pieces
Combine drained corn, black beans, and red onion in a large bowl
In a separate bowl, mix mayonnaise, softened cream cheese, cheddar, and mozzarella until smooth
Fold in crumbled bacon, jalapeño, and half of the parmesan cheese
Season with salt and gently stir until fully combined
Chill for 30 minutes to allow flavors to meld
Transfer to serving bowl, top with remaining parmesan, and serve with tortilla chips or fresh vegetables

Notes

Frozen corn can be used in place of canned (adjust drainage time)
Triple cheese blend ensures optimal pull; substitute with 2 cups shredded Mexican blend if preferred
Store leftovers in an airtight container and consume within 3 days
