Description
This Mediterranean-inspired one-pan meal features seared chicken breasts glazed with a zesty lemon-cream sauce atop cauliflower orzo. Fresh herbs, garlic, and crispy shallots enhance the flavor while maintaining keto-friendly, high-protein nutrition. The Maillard-seared chicken creates a rich base, and the orzo simmers in olive oil for a satisfying, low-glycemic texture.
Ingredients
2 (8-ounce) boneless, skinless chicken breasts, halved horizontally
2 teaspoons salt-free Italian seasoning, divided
½ teaspoon salt (sea salt or kosher recommended)
3 tablespoons extra-virgin olive oil, divided
1 medium shallot (chopped, about ⅓ cup)
6 medium fresh garlic cloves, minced
2 teaspoons fresh rosemary, finely chopped
¼ teaspoon crushed red pepper (optional for heat)
1½ cups cauliflower orzo
¼ cup grated Parmesan cheese
1 cup heavy cream
1 tablespoon fresh lemon zest
2 tablespoons fresh lemon juice
1 cup baby spinach, roughly chopped
Instructions
Heat 1 tablespoon olive oil in a large skillet over medium-high heat
Season chicken cutlets with 1 teaspoon Italian seasoning and ¼ teaspoon salt
Sear chicken 4-5 minutes per side until golden brown, remove from pan
Add remaining 2 tablespoons olive oil, shallot, and garlic to the pan
Sauté 3-4 minutes until shallots are translucent
Stir in rosemary, crushed red pepper, and remaining 1 tsp Italian seasoning
Add cauliflower orzo, cooking 5 minutes to toast slightly
Pour in heavy cream, lemon zest, and ¼ tsp salt
Bring to simmer, stirring until sauce thickens (5-7 minutes)
Return chicken to pan and add chopped spinach
Cook 3-5 minutes until spinach wilts and chicken is fully cooked
Finish with Parmesan and lemon juice, stirring to combine
Notes
Use high-quality cold-pressed extra virgin olive oil for best depth of flavor
Yellow onion can substitute shallot if preferred
Adjust crushed red pepper quantity based on spice preference
Parmesan adds umami without alcohol
Thicker cream results in more luxurious texture
Can add cherry tomatoes or kalamata olives for optional Mediterranean flair
