Ingredients

1.5 lbs ground beef (top sirloin recommended)
1 tsp kosher salt (plus 1/2 tsp)
1 Tbsp olive oil (high smoke point like avocado oil)
1.5 tsp garlic powder
2.5 lbs russet potatoes
1 tsp smoked paprika
1 tsp dried rosemary
20 pearl onions, halved
1 cup beef broth
1/4 cup unsalted butter
1 tbsp minced garlic
1/4 cup full-fat milk
2 tbsp cornstarch (gluten-free if needed)
1 tsp Worcestershire sauce (gluten-free variant)


Instructions

Heat olive oil in a cast-iron skillet over medium-high heat until shimmering
Toss beef chunks with garlic powder, 1 tsp salt, and thyme; brown 3 minutes per side
Add pearl onions and sauté until caramelized, deglazing the skillet with beef broth as needed
Layer browned beef and onions in the slow cooker; top with potato chunks
Mix smoked paprika, 1 tsp dried rosemary, and 1/2 tsp salt; spread evenly over the meat
Cook on LOW 7-8 hours or HIGH 4-5 hours until beef is tender
In a saucepan, melt butter over medium heat; add minced garlic and Worcestershire
Stir in cornstarch-milk slurry until bubbly and thickened
Pour sauce over the beef and potatoes in the slow cooker, stir to coat
