Ingredients
1 lb boneless, skinless chicken breast, cubed
1/3 cup hot sauce

1/4 cup nonfat plain Greek yogurt
12 oz frozen cauliflower rice
235g ready-to-eat basmati rice
1 Tbsp fresh lime juice
12 cherry tomatoes, chopped
1/3 English cucumber, sliced
3/4 cup shredded carrots
2 stalks green onions, chopped
3 Tbsp low-calorie ranch dressing
Salt and pepper to taste
Instructions
Season cubed chicken breast generously with salt and pepper.
Sear the chicken in a hot skillet until cooked through and golden brown.
