Description

Crispy, spicy cauliflower bites coated in a nutrient-dense almond and tapioca flour mix. A keto-friendly game day snack that mimics the texture of buffalo wings without meat or saturated fats.


Ingredients

4 heaping cups fresh cauliflower florets (410g)
2 large eggs
3/4 cup almond flour
1/4 cup tapioca flour
2 tbsp tapioca flour
1 tsp chili powder
1 tsp cayenne pepper
2 tsp garlic powder
1 tsp paprika
1 tsp sea salt
1 tbsp avocado oil
3/4 cup buffalo sauce
1/2 cup grated cheddar (optional)
3 tbsp water (for buffalo sauce)


Instructions

Preheat oven to 425°F (220°C). Divide florets into uniform 1-in. pieces
Whisk eggs in shallow dish. In separate bowl, blend almond flour, tapioca flour, chili powder, cayenne, garlic powder, paprika, and salt
Dip florets in egg mixture, then thoroughly coat with flour mixture
Arrange on parchment-lined baking sheets sprayed with avocado oil
Roast for 15 minutes
Meanwhile, combine buffalo sauce, water, and optional cheddar; set aside
Turn florets after first 15 minutes, then coat generous with buffalo sauce
Return to oven and bake 10 more minutes until golden and crispy

Notes

For vegan version: Replace eggs with 2 flax eggs (2 tbsp ground flax + 6 tbsp water)
Check store-bought buffalo sauce for alcohol content; substitute with acaiberry vinegar mix if needed
Spray baking sheets with heart-healthy avocado oil for crispier results
Store in airtight container up to 3 days
