Description

Savory high-protein chicken lettuce wraps with a low-carb, Asian-American twist. Bold hoisin and soy sauce flavors mingle with tender chicken, water chestnuts, and crisp lettuce for a restaurant-quality meal in 20 minutes. Alcohol-free and pork-free.


Ingredients

Ground Chicken (1 lb)
Oil (1/2 tbsp, avocado or grapeseed oil recommended)
Small Onion (1 unit, finely diced)
Hoisin Sauce (1/3 cup, low-sugar brand preferred)
Low Sodium Soy Sauce (2 tbsp, or tamari for gluten-free)
Apple Cider Vinegar (1 tbsp, alternative to rice wine vinegar)
Freshly Grated Ginger (1/2 tbsp, fresh only)
Water Chestnuts (8 oz can, drained and chopped)
Butter Lettuce (a few large leaves for wrapping)
Optional: Sesame Seeds or Crushed Peanuts (for garnish)


Instructions

Heat oil in a large skillet over medium-high heat. Add ground chicken and cook until browned and nearly cooked through, 6-8 minutes.
Add diced onion and sauté 2-3 minutes until translucent. Stir in hoisin sauce, soy sauce, apple cider vinegar, and grated ginger. Cook 1-2 minutes to meld flavors.
Add chopped water chestnuts and stir until heated through, ~2 minutes. Cook until chicken is fully cooked (165°F) and sauce thickens slightly.
Place 1/4 of the mixture in each butter lettuce leaf. Garnish with sesame seeds or peanuts. Fold lettuce tightly and serve immediately.

Notes

For a keto version, serve with extra lettuce and avoid pre-packaged hoisin (check labels for hidden carbs).
Use ground turkey as a 1:1 substitute for chicken.
Store leftover filling (not wrapped) in the fridge up to 2 days; wraps are best served fresh.
Increase ginger to 1 tbsp for bolder flavor.
