Ingredients
1 cup (2 sticks) softened butter
1 cup chunky peanut butter
1/2 cup creamy peanut butter
2 cups sugar-free powdered sugar
1 (12-oz.) box vanilla wafers
2 cups semi-sweet chocolate chips
Instructions
Crush vanilla wafers into fine crumbs using a food processor or pulse in a sealed bag with a rolling pin
Combine crushed wafers with softened butter, chunky peanut butter, and sugar-free powdered sugar
Press the mixture into an 8×8-inch greased baking pan
Microwave the reserved creamy peanut butter and chocolate chips (in 30-second intervals) until smooth
Spread the chocolate mixture evenly over the base
Refrigerate for 1–2 hours until firm
Cut into 16 bars
