Description

A 15-minute low-carb meal with lean ground turkey, fresh summer vegetables, and smoky fire-roasted tomatoes. Packed with protein and nutrients, it’s perfect for keto, paleo, or health-conscious diets.


Ingredients

1 tablespoon olive oil
1 pound lean ground turkey (93% lean)
1/2 cup diced onion
2 cloves garlic
1 1/2 teaspoons dried oregano
1 teaspoon dried basil
3/4 teaspoon kosher salt
Freshly ground black pepper, to taste
1 1/2 cups diced zucchini/summer squash
1 1/2 cups trimmed green beans, cut into 1-inch pieces
1 (14.5-ounce) can fire-roasted diced tomatoes
1 teaspoon ground cumin


Instructions

Heat olive oil in a large skillet over medium-high heat.
Add ground turkey and cook until no longer pink (4-5 minutes).
Stir in onion and garlic, sauté for 2-3 minutes.
Add zucchini, green beans, oregano, basil, salt, pepper, and cumin; cook for 5 minutes.
Pour in fire-roasted tomatoes (with juice) and simmer for 3-4 minutes until vegetables are tender.
Adjust seasoning and serve warm.

Notes

Use ground chicken or lean beef as alternatives to turkey.
Add 1/4 cup fresh basil at the end for a brighter flavor.
Store leftovers in an airtight container for up to 3 days in the fridge.
