Description
Crunchy, cinnamon-dusted keto churros made in an air fryer for a low-carb, high-protein dessert. These light, airy churros substitute almond flour and low-carb sweeteners while maintaining a satisfying crunch and rich flavor.
Ingredients
1 cup water
1/3 cup unsalted butter
1 Tablespoon granulated sugar (or Monkfruit/Erythritol)
1 pinch salt
1 cup almond flour
3 large eggs
1/2 cup granulated sugar coating (keto-friendly sweetener)
1 teaspoon ground cinnamon
Instructions
Heat water, butter, sugar, and salt in a saucepan until melted and simmering.
Whisk in almond flour and xanthan gum (1 tsp) until combined.
Remove from heat and let cool slightly. Add eggs one at a time, beating until fully emulsified.
Transfer dough to a piping bag. Pipe 6-inch logs into air fryer basket.
Air fry at 370°F (185°C) for 6 minutes, then flip and fry for 5 more minutes.
Toss cooked churros in a mixture of 1/2 cup keto sweetener and 1 tsp ground cinnamon.
Notes
Use coconut oil instead of butter for a dairy-free version
Store in an airtight container for up to 2 days
