These hearty gluten-rich rolls feature turkey pepperoni, melted mozzarella, and garlic-seasoned dough for a satisfying low-carb meal. Perfect as snacks or main dishes with a halal-friendly twist.
Ingredients
2 1/2 cups all-purpose flour
1 cup whole milk (or non-dairy alternative)
1/4 cup warm water
1/2 cup Greek yogurt, strained (see note)
2 tsp active dry yeast
1 tsp salt
2 tsp garlic powder
1 cup grated mozzarella cheese
12 slices turkey pepperoni (no pork content)
Instructions
Preheat oven to 400°F (200°C) with a baking stone or inverted baking sheet on the middle rack
In a large bowl, mix yeast with warm water and let rest 5 minutes
Combine flour, salt, garlic powder, and Greek yogurt in a mixer
Add wet ingredients and mix until smooth; knead on floured surface 8-10 minutes
Chill dough at 72°F (22°C) for 1 hour
Roll dough into 16 equal portions
Wrap 2 mozzarella slices and 2 pepperoni slices in each dough ball, sealing edges
Bake 12-14 minutes until golden brown
Notes
Strain yogurt for 30 mins using cheesecloth for firmer texture
Chill dough to prevent overproofing
For pizza sauce, use pureed sun-dried tomatoes
Store in aluminum foil for 3 days in fridge or 2 months frozen
Reheat at 350°F (175°C) for 5-7 minutes
