Description

Nostalgic peanut-shaped sandwich cookies with a crisp, caramelized shell and creamy peanut butter filling. These halal-friendly treats use light brown sugar for moisture and a crosshatch pattern to perfect the shape.

Ingredients

All Purpose Flour
1 1/2 cups
Baking Soda
1 teaspoon
Kosher Salt
1/4 teaspoon
Unsalted Butter
1/2 cup + 1/4 cup
Light Brown Sugar
1 cup
Creamy Peanut Butter
1 cup + 1/2 cup
Large Egg
1 unit
Pure Vanilla Extract
1/2 tsp + 1/4 tsp
Granulated White Sugar (for rolling)
1/2 cup

Instructions

Preheat oven to 350°F (180°C)
Whisk flour, baking soda, and salt in a bowl
Beat unsalted butter, brown sugar, and vanilla until fluffy
Add egg, then blend in remaining vanilla
Mix in flour until smooth
Wrap dough in plastic and chill 30 minutes
Roll dough into 1/2-inch balls
Toss each ball in granulated sugar
Using a fork, press each ball into a crosshatch patterned disk
Bake 10-12 minutes until golden
Cool completely on wire rack
Spread thick peanut butter filling between cooled cookies

Notes

Use unsalted butter for halal compliance
Roll dough balls in sugar before baking for signature crunch
Ensure dough is well-chilled to prevent spreading
Store in airtight container for up to 3 days
