Ingredients
2 large chicken breasts (approx. 1 lb)
8 strips halal beef bacon, chopped
1/2 cup super fine almond flour
1/4 cup low-carb Italian seasoning
1/2 tsp garlic salt
1/2 tsp paprika (smoked preferred)
1/2 cup avocado or canola oil
2 tbsp unsalted butter
1 cup chicken stock
1/2 cup heavy cream
Pinch of cayenne pepper
Instructions
Preheat oven to 400°F (200°C) if using thighs
Slice chicken breasts horizontally into cutlets
Cook chopped halal bacon in a large skillet until crispy
Pat chicken dry, season with garlic salt and paprika
Coat chicken evenly with almond flour and Italian seasoning
Heat oil in skillet over medium-high heat and sear chicken (5-6 minutes per side)
Deglaze pan with chicken stock, scraping up browned bits
Add butter, herbs, and cayenne to the gravy
Reduce heat to low, place chicken in oven or simmer on stovetop until chicken is fully cooked (internal temp 165°F)
Stir in heavy cream and simmer 5 minutes until sauce thickens
Notes
For extra smokiness, use chipotle-infused oil instead of regular oil
Adjust heat to avoid burning the almond flour during simmering
Store in airtight container for up to 3 days
