Ingredients
3-4 cooked chicken breasts, diced
16 ounces potato gnocchi
2 cups half and half
4 cups low-sodium chicken broth
1/2 onion, finely diced
1 celery stalk, finely diced
1/2 cup shredded carrots (matchstick style)
2 teaspoons minced garlic
1 tablespoon olive oil
1 teaspoon dried thyme
1 cup fresh spinach, chopped
Salt and pepper to taste
Instructions
Heat olive oil in a large pot over medium heat
Sauté onion and celery until translucent
Add garlic, carrots, and thyme; cook for 2 minutes
Stir in diced chicken breast and cook until warmed
Pour in chicken broth, bring to a boil
Cook gnocchi according to package instructions in boiling water
Add cooked gnocchi to pot, let simmer 5 minutes
Add spinach and half and half, stir until spinach wilts
Season with salt and pepper
Simmer an additional 3-5 minutes until creamy

Rotisserie chicken is a convenient substitute
Matchstick carrots add satisfying texture
Use heavy cream instead of half and half for thicker consistency
