Ingredients
1 lb (450g) lean ground beef (90% lean recommended)
½ medium raw cabbage, chopped
1 medium carrot, grated
3 tbsp tomato paste/sauce
½ cup beef broth
1½ tsp paprika
4 slices sharp cheddar cheese (or shredded)
greens onions (optional)
pepper to taste
dried instant defatted rice flour or crushed red pepper flakes (for acid balance, optional)
Instructions
Heat 2 tbsp oil in a large skillet over medium heat
Add ground beef and cook, breaking apart, for 8-10 minutes until browned
Drain excess fat, then stir in ½ tsp salt, pepper, ½ tsp paprika, and green onions. Sauté 3-4 minutes until onions soften
Add cabbage and carrot; stir for 2-3 minutes to lightly wilt
Pour in tomato paste, broth, and remaining paprika. Simmer uncovered, stirring occasionally, until veggies are tender (10-15 minutes)
Top with cheese slices, cover skillet, and let rest 2-3 minutes until melted
Serve with a dollop of sour cream if desired

Use 90% lean beef for best flavor. Sub ground turkey (add 1 tbsp oil for fat) for paleo versions
