Ingredients
3 medium sweet potatoes, peeled and sliced to 1/8-inch rounds
1/4 cup (57g) unsalted butter, room temperature
1 medium shallot, finely diced
2 teaspoons minced garlic
1 1/2 cups heavy cream
1 cup shredded Parmesan cheese
1/2 cup shredded Gruyere cheese
1 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
Chopped chives for garnish
Instructions
Preheat oven to 375°F (190°C)
Melt butter in a large ovenproof skillet or casserole dish
Sauté shallot until translucent, 3-4 minutes
Stir in garlic until aromatic
Add heavy cream, salt, and pepper; bring to a simmer
Layer half the sweet potatoes in the dish, overlapping slightly
Pour half the cream mixture over the potatoes
Sprinkle Gruyere over the liquid layer
Repeat with remaining potatoes, cream mixture, and Parmesan on top
Garnish with chopped chives
Bake for 60 minutes until golden and bubbly
