4 (10-inch) flour tortillas
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
3 tablespoons unsalted butter
1/4 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon pickle relish
Instructions
Preheat cast iron skillet over medium-high heat until nearly smoking
Form 4 equal patties from 1 pound ground beef and season both sides liberally with salt and pepper
Smash patties flat onto the hot skillet to create a 4-ounce burger
Cook 90 seconds per side for medium (adjust time for desired doneness)
Spread a mix of 1/2 cup cheddar and 1/4 cup mozzarella across each tortilla
