Description

Vibrant, nutrient-dense meal with bell peppers stuffed with seasoned ground beef, black beans, brown rice, and cheddar jack cheese. Gluten-free, balanced, and perfect for family dinners or meal prep.


Ingredients

6 large bell peppers
1 lb lean ground beef
1 medium diced onion
14.5 oz diced tomatoes
18 oz black beans (drained and rinsed)
15 oz corn (drained or frozen)
2 cups cooked brown rice
1 1/2 cups cheddar jack cheese (shredded)
Taco seasoning
1 tbsp olive oil
Optional: avocado, cilantro, or lime for serving


Instructions

Preheat oven to 375°F (190°C)
Cut bell peppers from stems and remove seeds; place in a baking dish
Sauté diced onion in olive oil until translucent
Add ground beef and cook until browned
Drain excess fat from beef
Mix in taco seasoning, brown rice, black beans, corn, and diced tomatoes
Fold in cheese and stir to combine
Spoon mixture into pepper cavities
Cover dish with foil and bake for 30 minutes
Remove foil and bake 10–15 minutes for golden cheese
Let cool slightly before serving

Notes

Use red or orange bell peppers for extra sweetness
Ground turkey is a lean substitute for beef
Brown rice can be replaced with white rice for quicker prep
Store leftovers refrigerated for up to 3 days
Vegetarian option: omit beef and add more lentils or mushrooms
