Ingredients
2 lbs top sirloin steak (well-marbled, cubed into 1.5″ pieces)
2 tbsp olive oil
1/4 tsp salt (divided into 4 pinches)
1/4 cup buttery spread (soy-free Earth Balance or dairy butter)
6 cloves pressed garlic (blended into paste)
1/4 cup fresh parsley (minced)
Instructions
Trim surface fat from steak and cube into 1.5″ pieces
Dry meat thoroughly with paper towels
Heat 1 tbsp olive oil in a skillet over medium-high heat until shimmering
Cook steak in batches for 2-3 minutes per side until browned (avoid overcrowding pan)
Set cooked steak aside
In a small bowl, mix buttery spread, garlic paste, and parsley to form herb butter
Return steak to skillet with remaining 1 tbsp oil, spread herb butter mixture on top
Cook for 1-2 minutes to meld flavors, then transfer to serving plates
Notes
Rapid drying the meat ensures optimal sear
Adjust salting in real-time by tasting batches
Use a heavy cast-iron skillet for best browning
Pairs well with cauliflower rice for added volume with zero carbs
